Every drink and plate lands on a bill
Bar and kitchen orders are taken against a table or a room, so a guest's drinks reach their folio and a walk-in's order is still captured. What leaves the store is tied to a sale, not to trust.

Every item has an opening count, sales, and an expected balance. Low stock is flagged before the bar runs dry, and the expected figure is what the night's count gets measured against.

What was sold vs what actually left
At close, the expected balance from sales meets the physical count. Matches pass quietly; a variance is flagged with the exact item and quantity, so shrinkage is a conversation the same night, not a mystery at month-end.
Cameras that support the count, not replace it
Separate pipelines detect corridor presence and track bottle or food movement across a service counter, then send evidence events into reconciliation as supporting signal. This is working on local video and webcam sources; physical camera install and tuning remain deployment-specific work, and it is presented here as evidence input, not a finished surveillance claim.
The desk keeps working when the network does not
